Guinness Your Cake

I am not a huge baker, but on special occasions I usually bake one of two things:  1) oatmeal cookies (usually with raisins, dark chocolate, and ginger) or THIS guinness cake. Delish! Years ago I took the recipe from @people and I've made variations of it ever since! Today's variation: used whole wheat flour instead of all-purpose, made only half the portion, and used powdered sugar with blackberries instead of frosting. 

HOW TO MAKE: 

  1. Preheat oven to 350F. Butter a 9" pan. 
  2. Heat 1/2 cup of guinness and 5 tbsp of unsalted butter over medium-low heat until butter melts; remove from heat. Whisk in 3 heaping tbsp of unsweetened cocoa and 1 cup of granulated sugar. 
  3. In a separate bowl, combine 3 tbsp of low-fat sour cream, 1 large egg, and 2 tsp of vanilla; whisk INTO cocoa mixture. 
  4. Whisk in 1 cup of whole-wheat flour and 1 1/4 tsp of baking soda. 
  5. Pour batter into pan. Bake for 45 minutes. Remove and cool completely. 
  6. Sprinkle with powdered sugar and add a few blackberries. Yum.

Because of the nuts, dried fruit, and seeds, it’s a little more caloric than cereal, but packed with #wholefoods and all deliciously good for you. #Cod is one of the most Eco-friendly #fish. It also happens to be very easy to cook and perfectly flaky consistency for babies to eat. There’s very little need to add salt to a babies diet, so I just cooked the cod with a olive oil and herbs de Provence. About 3 minutes on each side. I let it cool down before I shred it.

I have officially become an #oyster person. I feel part of a cool club! Oysters are one of the most nutritious foods per calorie. Happy to be home! Missed #homemade #frenchtoast. I usually soak the bread for a long time in a mix of #eggs, #almondmilk, and #spices (this time it was #cloves, #cinnamon and a grinder from #traderjoes that has sugar, chocolate, and coffee). I opt for less bread and more egg mix. Then the trick is to use more whole #fruit instead of so much sweetener. Even though Agave, 100% pure maple syrup, or honey are #naturalsweeteners they still have tons of sugar/calories. I also sprinkled the French toast with #sprouted grains and seeds. unique service. They deliver pre-portioned ingredients for 3 complete, balanced meals every week. They do the shopping and you do the cooking! I would totally recommend it for those peeps who find it hard to find the time to go #foodshopping or are maybe a little scared to get into the kitchen or simply are stuck in a rut with the same cooking repertoire. Every meal takes about 30-40 minutes including prep time
and are about 500-600 calories per serving (even though you can almost always tweak the amount to get more out of it). We made:
- #Steak and roasted potatoes with sautéed long beans and tomato
- #Mexican-style chicken #tortas with tomato, avocado and English cucumber salad
- Crispy #catfish (not pictured) with Sicilian eggplant #caponata

Try this yummy #breakfast that took all of 9 minutes to prep, cook, and eat (just kidding). It’s also packed with #protein (a nutrient that is lacking in most American breakfasts) as well as #healthyfats.
1) Heat 1 tbsp of olive oil in a small/medium pan. 2) In the meantime cut half a #redonion. 3) Sauté it with the olive oil for ~3-4 minutes. 4) Crack 2 large eggs and scramble until desired consistency. 5) Clean and cut a handful of #cilantro. 6) Top off with 2 tbsp of #pepitas (#sunflower #seeds) and a tsp of fresh #jalapeño. Add salt and pepper to taste.
FYI: the best way to #store #cilantro is keeping it in a jar in the refrigerator with a bag over the leaves.
